Costa Rica is AMAZING – I lived there for a 3 years pre-kids and can’t wait to go back and take them to visit. It’s really really kid-friendly as well and the food is something else. You have most of the places that I would have picked but I do love Jaco which is further down the Pacific coast – learning to surf there was a lot easier than with the biggest waves at the place you mentioned above and where I will take my kids to learn especially as the water is so warm not like learning in the UK! Wow, this is a pretty comprehensive list! We are off to Costa Rica for a few weeks this summer and this has given me even more ideas! Nice to see the Caribbean coast getting some attention, we’re planning to spend 5 days near Puerto Viejo, hopefully we’ll be able to do some diving / snorkeling on the reef near there as it sounds quite impressive.
