Last weekend, with lockdown restrictions easing slightly, Huw went to Wales to see his mum. The children would have loved to go too, but couldn’t. Instead we decided to have a go at making Welsh cakes. Here’s how Toby got on (we watched and gave instructions!)

Welsh Cakes: Ingredients

- 225g plain flour
- 85g sugar
- 100g butter
- 1/2 tsp baking powder
- 1/2 tsp mixed spice
- 50g currants
- 1 egg
- Milk (splash)
- Salt (pinch)
Method
- In a large bowl put the flour, sugar, baking powder, pinch of salt and mixed spice.
- Cut the butter into small pieces and add to the bowl.
- Using fingers, rub the butter into the dry ingredients until a crumble forms.
- Add the currants and mix in.
- Beat the egg and stir into mix until a dough forms. If it is too dry, add a splash of milk to help it come together.
- Roll the dough out on a floured surface, until the pastry is about 1 cm thick.
- Use a cutter to punch out as many rounds as you can with the pastry.
- Heat a flat griddle with a medium flame and rub some butter over the cooking surface.
- Cook four at a time. They take around 3 mins on each side. Once they are golden brown they are cooked.
- Sprinkle sugar over the top and serve while warm.
Final Thoughts
Whenever we visit Swansea Market we buy hot Welsh cakes, straight off the griddle, sprinkled with sugar. They are lovely! For a first attempt, our home made effort was a success. My brother and dad popped round for a socially distanced cuppa and chat, and they polished most of them off! So, based on that, they must have been good! This is such an easy recipe, we’ll definitely make them again.
